Pork Loin Marinara Linguine
(2 servings)
300 - 400 g of pork loin meat (diced)
1 carrot (diced)
1 yellow capsicum (diced)
1 cloves of garlic (minced)
1 bottle of Prego's Marinara Sauce (I used about 3/4 bottle)
Marination:
Soya Sauce (1 teaspoon)
Salt (1 teaspoon)
Huadiao Wine (2 dashes)
Sesame Oil (2 teaspoons)
Pepper (2 dashes)
  1. Marinate the pork and let it set for 30 min or so
  2. Heat up the wok and put a tablespoon of oil
  3. Stir fry the garlic until it lets off the aroma
  4. Put in the meat and stir fry until they are 80% done
  5. Pour in the carrots and capsicum and fry together
  6. Pour  a 1/4 water into the mixture and let him simmer over medium heat ( for about 5-10 min, depending on how soft you want your carrots to be)
  7. Pour the Marinara sauce and mix well
  8. Heat for a couple minutes before pouring it over the linguine (cooked as instructed)
I chose the yellow capsicum cos' I love the contrast in colours with the carrots. They really look pretty together but of course with the Marinara, everything will look the same. Haha! But it's always good to try a variety of food colours for health reasons.

I have not done my "once-a-weekend" cooking since I got my cough. I am trying to start with something simpler. I think I have a love-hate relationship with cooking. I love to cook but I hate the aftermath --> the perspiration, the greasey face and floor, the yellow-faced wife look. I wonder how come the chef and those modern ladies on tv/movies made cooking seem so simple and hassle - free. Even those on Master Chef and Top Chef, after cooking, they still look as good as new. Is it they cook in the air conditioning???? Or just the weather here??? Haha, just mindless rantings here... :p

Boiled Coke with Ginger and Lemon

I was bothered by this very persistent cough for weeks. Started with what seemed very mild dry cough, it got worse with lots of phlegm. The night before was really bad that I had to go out of the room for 4 times in the middle of the night just to cough it all out. Applied Vicks at the nose and next minute, my nose was filled with thick mucus.

I recalled an old recipe which supposedly can 'cure' cough. So I tried it last night:

Boiled Coke with Ginger & Lemon

Ingredients
1 can of coke
1 inch of ginger
half a lemon
  1. Pour the coke into the pan
  2. Slice the ginger and lemon
  3. Put the ginger and lemon in the coke
  4. Boil for 10 min
  5. Drink it while it's hot
Verdict? It tastes ok more like very hot lemon water with a hint of ginger flavour. I think I cannot really taste the coke anymore. This drink is definitely better than any cough mixture. So I drank the full big cup. Guess what, I think it kind of work because I did not cough at all last night!!! But the cough came back once I woke up this morning.

Well at least, I think this works to some extent! Highly recommended and I am sure to do this again if need be.

Cooking for Sunday Lunch

As part of my New Year Resolution, I want to prepare a home-cooked meal every week. But sometimes before I realised it, it's the weekend already and I did not plan for it. Anyway, I will continue to try and be better at it.

So yesterday lunch was simple 2 dishes with rice:

Minced Meat Patties
(Makes 4 patties)
  • minced meat ($2.80 worth cos I can't remember the grams)
  • 1 onion (small dice)
  • 1/2 carrot (small dice)
  • Marination:
  • Soya Sauce
  • Huadiao Wine
  • Sesame Oil
  • Cornflour
  1. Mix the ingredients
  2. Marinate the ingredients (put in the fridge overnight)
  3. Steam for 20 min
  4. Serve (can garnish with mushrooms)

Hubby and I thought the patties were too bland though they let out nice fragrance of the seasoning. I think I did not put enough soya sauce to make it savoury enough because I thought it was safer to have them bland so that we could salvage them later by adding more soya sauce. But then again, for the marination, I did not have any measurement because anything which my mom taught me was "aga aga", means just use my gut feeling. So if next time I prepare this again, I will have to trial and error.

Mushroom Omelette
(Makes 2 omelettes)
  • 4 eggs
  • pinch of salt
  • 1 can of sliced mushrooms
  • butter
  1. Beat the eggs with a pinch of salt
  2. Heat the wok, add butter
  3. Pour in egg mixture
  4. Scatter mushrooms on the omelette
  5. Heat until omelette turns golden yellow
  6. Serve
